Rest is lovely. We often forget how necessary it is when we’re in the heat of the moment and honestly loving the work that we do. Without a little time for reflection, even the great things and opportunities can be piled onto the huge list of to dos (that we give ourselves, of course).

We’ve taken the past few weeks to give ourselves a little break, to cleanse, to recalibrate. It has been wonderful. It’s interesting how a little focused rest can get those creative juices flowing.

We’ve got some cool stuff on the way… the new online shoppe (eeeeeep!), yummy recipes.. adventures! Thank you so much for coming along with us on this journey..

These moments.. ah.. We’ve got the best “job” ever.

Blackened Thai chicken wings

Three pounds of chicken wings, we like free range

1/2-cup rice vinegar

1/3 cup of soy sauce

1/4 cup of brown sugar

1 tablespoon of chili oil

3 tablespoon of sambal garlic chili sauce

3 tablespoons of fish sauce

3 tablespoons chopped ginger

3 cloves chopped garlic

1 small dried Thai chili

1 tablespoon roasted sesame seeds

3 thinly sliced scallions

The night before you fire up the grill- Add ginger, garlic, chill and chili oil to a non- stick pan. Cook over medium heat for 1 min. then add all the rest of the ingredients except the sesame seeds and scallions. Bring up to a simmer, stirring occasionally. Then cover and let cook for around 20 min.  Uncover and let cook at medium high heat for another 10 min until wings are cooked and sauce is reduced and thick. Cool and refrigerate.

GRILL TIME!

Get the grill nice and hot. Just before you drop the wings, use a damp cloth dipped in olive oil to give the grill a quick wipe. Place the wings on the grill for 2 min on each side or until desired char is achieved. Toss in a bowl with a little extra sauce and sesame seeds. Plate in a pile and top with scallions. Enjoy!

 Black eyed peas

2 cups black eyed peas

1 large onion, chopped

3 cloves garlic, chopped

½ lb thick sliced bacon

½ gallon fresh water

Kosher salt and fresh ground pepper to taste

Cook down onions and bacon over the fire stirring constantly. Add the garlic, black eyed peas and water. Stir.  Add some salt and pepper, cover and let it stew over the coals. Stir occasionally.

They should be ready in 3 hours or so.
