5 Easy Lunches To Get You Through The Work Week

When it comes to your lunch you’d want to prepare something delicious and nutritious but you are also looking for easy and accessible recipes that could get you through your workweek. Sometimes you feel like you’ve run out of possibilities and it can be really time-consuming to come with new ideas. You just end up eating the same meal you’ve been eating for weeks when all you actually want is to try something new with a minimum of effort. This is why I’ve compiled for you 5 easy lunches that can be prepared ahead and can get you covered for the entire week.

Chicken Ranch Wraps

Ingredients:

  • 2 cups cooked grilled chicken breast (you can use any part of the chicken and it can be up to you how you cook it)
  • 1/4 cup Ranch Dressing
  • 1/2 cup Mozzarella cheese
  • 1/4 cup cilantro minced (optional)
  • 4 tortillas

After you’ve filled and folded your tortillas, cook them on a heavy-duty pan or a grill until they are crispy and golden.

Tuna Pasta Salad

Ingredients:

  • 1 pound cooked shell pasta
  • 12 oz tuna drained
  • 1 cup frozen peas
  • 1 cup chopped celery
  • 1/2 red onion
  • 1/2 pickles
  • 8oz diced cheddar cheese
  • 1 1/2 cup mayonnaise
  • 1 tbs vinegar
  • 1 tsp garlic powder and 1 tsp onion powder
  • salt and pepper
  • dried dill

Make the dressing in a separate bowl (mayo, vinegar, salt, pepper, garlic and onion powder, dill) and combine with the rest of the ingredients.

Easy Chicken Burrito Bowls

Ingredients:

Marinate 5 chicken tights with 1/4 cup taco seasoning and salt place them in the fridge for 15-20 minutes

For the dressing ( Pico de Gallo) you will need:

  • 2 cups tomatoes
  • 1 cup onion
  • 2 Jalapenos finely diced
  • 1/2 cup cilantro
  • 1/4 tsp salt
  • Juice of 1 lime
  • For serving you will also need:
  • 3 cups cooked rice
  • 2 cups cooked black beans
  • 3/4 cup sour cream

In a heated pan, fry 2 cups corn kernels and season with salt and pepper. In the same pan fry the marinated chicken. Assemble the chicken bowls by dividing everything into 4 meal boxes.

Pizza Quesadilla

Ingredients:

  • 4 flour tortillas
  • 4 oz sliced pepperoni
  • 1 cup mozzarella cheese
  • 1 tsp butter
  • 1/2 cup marinara sauce

Add butter to a heated pan and put the tortilla into the pan. Sprinkle mozzarella, add the pepperoni and top with another tortilla. Cook on both sides.

Korean Beef Bowl

Ingredients:

  • 1 pound ground beef
  • 3 tbs soy sauce
  • 1 1/4 minced scallions
  • 1 tbs minced garlic
  • 2 tbs rice vinegar
  • 2 tbs honey
  • 2 tbs grated fresh ginger
  • red pepper flakes
  • 1 tbs sesame oil
  • For serving you will need:
  • Cooked rice
  • 1 1/2 cups shredded carrots
  • cucumbers
  • sesame seeds

Cut the beef into small pieces and cook it for 5 minutes, then add half of the scallions and 1 tbs of soy sauce. When the beef is cooked add the garlic. Stir together vinegar, honey, ginger, soy sauce, and spices and pour them over the beef and cook for another 2 minutes. Add the sesame oil at the end.
