Robyn's quick and healthy "Huevos Rancheros"
This morning I threw some stuff together from my fridge and pantry and came up with something that turned out to be super yummy. It’s clean, healthy and easy on the wallet!
Healthy and quick Huevos Rancheros
*Serves 2 with a nice amount of leftovers
1 pound 99% fat free ground turkey
5 egg whites
1 can black beans (You can make them from scratch if you like but the canned variety works just as well)
½ onion diced
½ tomato seeded and diced
½ bunch fresh cilantro
1 jalapeno seeded and diced
2 tablespoons salsa (again, you can make it fresh but I used Herdez brand because I had some in my cupboard and it worked nicely)
Salt and pepper to taste
To prepare the beans, sauté half the onion on medium until translucent with a teaspoon of light olive oil… Drain the beans, add to onions and mix without squashing. Set your heat to low and keep aside.
To prepare the turkey, sauté the other half of the onion with a teaspoon of light olive oil and then add the ground turkey … Stir until mostly done then add the salsa, half of the diced jalapeno, a handful of the chopped cilantro, the juice from 1 lime, salt and pepper to taste… Cover and put to the side on low heat.
In a separate pan scramble the egg whites until nice and fluffy then add to the turkey mixture.
If you’re down for some extra protein make yourself a sunny side up egg in another pan…
For the guacamole, I mashed a whole avocado then mixed it with a small handful of the fresh cilantro, the juice from 1 lime, salt and pepper…
That’s it! When plated nicely, this actually looks like a pretty nice dish! I put a heaping spoonful of the turkey into a shallow bowl, then the black beans and topped it with an egg. A big dollop of guacamole, a small handful of diced tomato and a few sprigs of fresh cilantro finish it off. Yum! Twas tasty, cost effective and now I’ve got a slightly cleaner fridge to boot! Enjoy!
