Alright, game changer here! This is quite possibly the tastiest (and healthiest) granola we've ever eaten.
Nutty quinoa granola
with coconut and cranberries
- 3 cups quinoa flakes.. seriously, how have we not know about this stuff?!?
- 1/2 cup good quality olive oil
- 1/2 cup 100% maple syrup
- 1/2 cup shredded coconut
- 1/4 cup raw cashews
- 1/4 cup raw sunflower seeds
- 1 tablespoon flax seeds
Preheat oven to 380 degrees. Mix quinoa flakes, olive oil and maple syrup in a large mixing bowl. Add coconut and nuts. Line a baking sheet with parchment, spread your granola mixture on the pan, then place in the oven for 15 minutes or until golden brown. Stir 3 times during baking. Add cranberries.
This granola is great with your favorite milk.. or with greek yogurt!
