Happy Thanksgiving

Thanksgiving is such a wonderful time... Taking a whole day out to let our friends and family know how much we love and appreciate them whilst cooking and eating yummy food.. heaven! Here are a couple of our favorite sweet potato recipes for to try and to make for your friends and family.

Sweet Potato croquettes

with real maple syrup

  • 7 honey graham crackers.
  • ½ stick of butter, melted
  • 1/8 teaspoon of nutmeg
  • 1/8 teaspoon of cinnamon
  • ½ teaspoon salt
  • ¼ cup brown sugar
  • 4 sweet potatoes
  • 2 eggs
  • 1 cup all purpose flour
  • 1-cup panko
  • 1 bottle pure maple syrup
  • a little powdered sugar for dusting

Preheat the oven to 375 degrees.

Peel and rough chop sweet potatoes into chunks, drizzle with olive oil and sprinkle with salt. Spread onto a sheet pan and roast until potatoes are soft. Set aside.

Using a food processor, pulse graham crackers until they reach a powder consistency. Mix graham cracker, melted butter, brown sugar, cinnamon, nutmeg and salt in a mixing bowl. Toast graham cracker mixture in a sauté pan, continually stirring to keep from burning.

Mash sweet potatoes in a bowl then fold in toasted graham cracker crumbs. Press plastic wrap firmly on top of mixture and place in the fridge to set for at least an hour.

3 part breading process: Pulse panko breadcrumbs a few times in blender or food processor.  Just enough to make a nice even coat. Pour the panko in a bowl. Crack the two eggs in another bowl and whisk until incorporated. Place the flour in a separate bowl as well.

Pull sweet potato mix out of fridge and form into smooth round 2-inch ovals. One at a time, place in flour and coat. Then, using slotted spoon, place in egg wash and fully coat. Lastly, place in panko and coat and set aside. Repeat this until you are out sweet potato mixture.

Set counter top fryer with canola oil in it to 360 degrees or use a pot and fry thermometer. When temp is reached drop in 3 at a time and fry roughly 3 min a piece or until golden brown.

Warm maple syrup in a saucepan and place a cinnamon stick in it. Pour into a small bowl for dipping. Dust with a little powdered sugar  and enjoy.

Bourbon Sweet Potatoes

  • 4 lbs sweet potatoes, peeled and cut into thin wedges
  • 3/4 cup dark brown sugar
  • 7 tablespoons sweet cream butter
  • 1 1/2 cups fresh squeezed orange juice
  • 4 oz bourbon, we like jack daniels for this recipe because it's nice and sugary
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon all spice
  • salt and pepper to taste

Preheat oven to 350 degrees.

Place butter, bourbon, orange juice cinnamon, all spice and brown sugar in a sauce pan and reduce over medium heat until 1/4 of the liquid is gone and sugar is completely dissolved. Should be slightly thickened.

Put sweet potatoes in a bowl, add the reduced bourbon sauce.. (Reserve 1/4 cup) and toss to coat.

Place the glazed potatoes in the oven and cook for an hour or until golden brown and tender. Top the sweet potatoes with reserved glaze.. season with salt and pepper to taste.
